50 g Lightened butter 39-41% sweet
120 g Dark chocolate with 40% minimum cocoa
4 eggs Whole chicken egg
400 g Fruits in light syrup (pears)
6 cc * Alcohol or wine for flaming or cooking, (pear brandy)
40 g whipped cream
1.In a pie dish 26 cm in diameter, place a baking sheet. Grind a dozen biscuits in the blender, add the melted butter and mix to obtain a homogeneous paste. Spread this paste in the bottom of the mold. Garnish the turn with half of the sponge biscuits dipped very quickly in the pear juice mixed with half of the brandy. Reserve at the refrigerator.
2.Prepare the chocolate mousse, soften the chocolate in the microwave with 1 CS of water and 1 CS of brandy. Stir in melted chocolate egg yolks and mix. Beat the whites until stiff, incorporate them very gently in the previous preparation. Let stand about 10 minutes.
3. At the end of this time, put the mousse in a pie dish and garnish with the half-pears. Decorate with whipped cream placed in small domes.
