Copycat Applebee’s Low Fat Veggie Quesadilla (Weight Watchers)

This is so good! I love it, low fat, healthy and easy. I used green peppers, zucchini, onion, broccoli, carrot and mushrooms. When I added the soya sauce the arma was fantastic. I also used one tortilla, put the filling on the half and folded over. I used 30gr low fat cheddar and I also added some tabasco sauce. Spicy!!! This was my lunch at the office for the next day. Wordeful! So yummy!

Ingredients :

1⁄2 tbsp canola oil

1⁄2 cup mushrooms, sliced

1⁄3 cup carrot, shredded

1⁄3 cup broccoli, chopped

2 tbsp onion, diced

1 tbsp red bell pepper, diced

1 tsp soy sauce

1 dash cayenne pepper

1 dash black pepper

1 dash salt

2 wheat flour tortilla

1⁄4 cup fat-free cheddar cheese, shredded

1⁄4 cup fat-free mozzarella cheese, shredded

1 nonstick cooking spray
