Pico de Gallo Recipe

Ingredients
  • 4 – 6 ripe plum tomatoes chopped
  • 1/2 cup chopped onion red or white
  • 1 jalapeno chile stemmed, seeded, and finely chopped
  • 1/2 cup chopped fresh cilantro
  • 2 tablespoons fresh lime juice
  • 1/2 teaspoon salt or to taste
  • 1/2 teaspoon fresh black pepper or to taste
Instructions
  1. In a medium-size mixing bowl combine all ingredients until well blended. For a smoother salsa, you can put everything in the blender or food processor and pulse a few times until it’s almost smooth, but still a little chunky.
  2. Cover and let stand for at least 30 minutes to let the flavors blend. Give it a stir, taste and adjust the seasonings before serving.
  3. This fresh tomato salsa recipe can be stored covered in the refrigerator and is best if used within 1 to 2 days of making.
